Best Apple Pie Recipe

This Best Apple Pie Recipe is one of the nicest I have ever tasted. Our kids say that it is THE BEST! High praise indeed. I put it down to the unusual use of sharp cheese in the recipe. Whilst this seems unorthodox, the savory seems to offset the sweet and the resultant pie is sweet without being sickly. Do try the recipe before you scorn it!

Again, the Cheese Pastry compliments the apples beautifully and creates a complex flavor. This combination is not so strange if you think of cheese boards that offer fruit alongside. And have you ever tasted a slice of fresh apple and cheese? Hmmm. You need to use quite a sharp Cheddar or similar cheese. Because the base is baked blind, the pie is crisp and "short".

This recipe is a modern twist on a very old recipe from "The American People's Cookbook".We use Granny Smith for the recipe below, but experiment with what you have on hand.

  • Easy
  • A little effort if you need to make Cheese Pastry
  • Preparation time: 15 minutes
  • Cooking time: 40 minutes
  • Serves: 8 slices
  • Ingredients:

  • 1½ quantity Cheese Pastry
  • 8 medium apples, peeled, pared, quartered and sliced
  • 1 cup mature Cheddar cheese, grated
  • ¾ cup pale brown sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • ½ cup chopped pecan nuts
  • 1 cup raisins
  • 1 tablespoon orange zest
  • 3 oz / 90g butter
  • Cinnamon Cream:

  • 1 cup cream
  • 2 tablespoons sugar
  • ½ teaspoon cinnamon
  • You will need a 9½ inch / 24 cm loose-bottom deep cake/pie tin.

    Method:

    1. Preheat oven to 350° F / 180° C.
    2. Divide the pastry into two portions, roughly two-thirds and one-third. Roll the larger portion out and line the pie tin. Bake blind according to the instructions for Cheese Pastry.
    3. Mix together the apples, sugar, flour, cinnamon, mixed spice and orange zest.
    4. Now, layer the ingredients in the pie crust in the following order: apples, sprinkling of cheese, raisins and pecans. Repeat the layers, ending with a layer of apples.
    5. Roll the remaining pastry out so that it is slightly larger than the top of the pie. Lift the pastry and place on top of the apples. Because the bottom has been baked blind, it is not possible to pinch the the edges together. However, I tend to let the top layer flop over the edges of the base, and then pinch it against the bottom layer and this works well and looks attractive.
    6. Bake for about 40 minutes until the top is golden and crisp.
    7. Serve this Best Apple Pie Recipe with Cinnamon Cream.
    8. Cinnamon Cream: Beat the cream, sugar and cinnamon together until the mixture forms soft peaks.
