Beef Noodle Recipe

Beef Stir Fry Recipe

There is quite a bit of chopping for this Beef Noodle Recipe but once that is done, the cooking is quick. This is a healthy beef stir fry recipe and ideal if you are looking for 30 minute meals.

You can judge the amount of noodles you will need, depending on your family's appetites. I prefer to have a large quantity of vegetables and fewer noodles. This, however, is an easy beef recipe where exact quantities are not imperative. You can ring the changes with seasonal vegetables. Sliced fresh spinach is also delicious - add it in at the end, just before the meat.

A little steak goes a long way in this recipe. Use sirloin, rump or tenderloin, all of which are tender.

  • Cooking time: 4 minutes for steak, 10 - 15 minutes for stir-fry
  • Serves: 4 - 6
  • Ingredients:

  • 4 - 6oz / 120 - 180g noodles or spaghetti,
  • 1lb 5oz / 600g beef steak
  • 2 tablespoons coriander seeds
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 3 medium carrots, peeled (5oz / 150g)
  • 1 stick celery
  • 2 red bell peppers (6oz / 180g)
  • 1oz / 30g fresh ginger
  • 1 small clove garlic, crushed
  • 6 spring onions
  • 8oz / 250g red cabbage
  • 2 tablespoons soy sauce
  • 1 teaspoon shrimp paste
  • 2 tablespoons palm sugar
  • 6 pickled lime leaves, very finely sliced (optional)
  • oil for shallow frying
  • Method:

    1. Cook the noodles or spaghetti according to instructions on packet. Cooking times will vary depending on brands etc. Cook until the noodles are 'al dente'. Drain and keep aside.
    2. Using a pestle and mortar, crush the coriander seeds. Add the black pepper and salt. Pat this mixture onto both sides of the steak.
    3. Prepare the vegetables: cut the carrots into fine sticks, about 2½ " / 5 cm long. Chop the celery and spring onions. De-seed the bell peppers and cut them into thin slices. Slice the red cabbage very finely. Peel the ginger and cut it into extremely thin slivers. Keep all the vegetables separate.
    4. Pour a couple of tablespoons of oil into a frying pan and bring it up to a sizzling heat. The oil should be hot enough that you can just pass your hand over the oil without burning it but it shouldn't be smoking (this is too high). Sear (fry) the steak for about 2 minutes on each side. Be careful not to overdo it. It should be very pink on the inside. It is going to get fried again. Keep aside to "rest" and then cut into slivers. Keep aside.
    5. Mix together the soy sauce, shrimp paste and palm sugar.
    6. Using a wok, add a few tablespoons of oil and allow to get hot. Add the carrots and fry for 3- 4 minutes, stirring constantly. Then add the celery, bell peppers, garlic and ginger. Fry for another 3 - 4 minutes. Add the spring onions, and red cabbage. Fry for a further 2 - 3 minutes, always stirring and tossing the vegetables.
    7. Add as much of the noodles or spaghetti as you deem necessary. Stir in well using 2 forks to split the noodles up evenly.
    8. Add the soy sauce mixture and lastly add the steak back. Stir-fry for a minute. Serve your Beef Noodle recipe immediately.
