Beef and Broccoli Recipe

This Beef and Broccoli Recipe makes good use of leftover beef. You should use a tender cut which doesn't need long cooking - fillet, rump or any other steak cuts are good choices. You don't need much meat for this recipe, making it ideal for budget meal planning.

This is one of those quick dinner recipes - the easiest of 30 minute meals. If you are using leftover steak or fillet that has already been cooked, just add it in with the broccoli at step 6.

  • Easy
  • Preparation time: 5 minutes
  • Cooking time: 20 minutes
  • Serves: 4
  • Ingredients:

  • 1 head broccoli - about 12 oz / 350g
  • 8oz / 250g mushrooms, sliced
  • 8oz / 250g lean beef - fillet, rump or another steak cut
  • 1 bell pepper, finely sliced
  • 4 tablespoons soy sauce
  • 2 tablespoons oil for shallow frying
  • Method:

    1. Cut the meat into slivers.
    2. Steam or lightly boil the whole broccoli head in a little water until it is just cooked. It should still be quite crisp and perfectly green. Don't overcook it otherwise you land up with bitter yellowy broccoli. Refresh the broccoli in cold water to stop it cooking further. Break into florets.
    3. Fry the bell pepper until it is just soft.
    4. Add the mushrooms and fry for two minutes. Do this at a high heat so that they cook quickly and don't lose their shape.
    5. Add the meat and fry until it is just cooked. You may like it slightly pink in the middle, or you can cook it a little longer so that it is well-done.
    6. Add the soy sauce and the broccoli florets. Cook for a minute.
    7. Serve with rice.
    8. As an option, you could sprinkle toasted cashew nuts or sunflower seeds over the top.
