Barbeque Recipes for Salmon
This is one of those barbeque recipes for Salmon which is really easy to put together. You can use any of the marinades above or even the marinade from our Grilled Chicken Marinade Recipe. It would also work to use one of the Barbeque Dry Rub Recipes; just baste the salmon with a little oil after adding the dry rub. |
This is one of those barbeque recipes whereby you can ring the changes: use any white fish that you may have caught (or bought) and add different vegetables providing they grill quickly (carrots and green beans are absolutely NOT going to work, but courgettes and quartered onions will).
EasyPreparation time: 10 minutesCooking time: about 10 minutesMakes 12 skewersIngredients: 2 lbs / 900g salmon fillet or other white fish, skin removed24 cherry tomatoes2 yellow bell peppers2 sticks celeryMarinade 1 ¼ cup lemon juice¼ cup olive oil1 clove garlic, crushed¼ cup fresh coriander, very finely choppedMarinade 2 ¼ cup lemon juice¼ cup olive oil1 clove garlic, crushed1 - 2 teaspoons fresh rosemary, finely choppedMarinade 3 ¼ cup lemon juice¼ cup olive oil1 clove garlic, crushed2 tablespoons fresh dill, finely choppedSee also: Grilled Chicken Marinade RecipeBarbeque Dry Rub RecipesMethod: - Soak the wooden skewers in water for 10 - 30 minutes to stop them burning on the barbeque.
- Cut the fish into 1" / 2½ cm chunks.
- De-seed the bell peppers and cut into chunks. Cut the celery into chunks.
- Thread the salmon, cherry tomatoes, chunks of bell pepper and celery onto the skewers. Repeat the sequence again.
- Mix together the marinade of your choice until the oil and lemon juice have formed a smooth emulsion (this is easily done in a small blender). Add the garlic and herbs of your choice. Place the kebabs in a shallow container or stainless steel baking tray. Brush the marinade over the kebabs. Cover and refrigerate until needed. (Turn the kebabs in the marinade after about half an hour if you are not cooking these straight away.)
- To cook: place the fish kebabs over a medium heat above the coals or on a gas grill. Cook for about 5 minutes and then turn the skewers. Grill until the fish is cooked all the way through. In other words, it should not be translucent in the middle.
