Baked Boneless Chicken Breast Recipe

This baked boneless chicken breast recipe was devised with 30 minute meals in mind.
|It resonates with bold Italian flavor whilst being very quick to prepare. This is rather like an easy version of a recipe for Chicken Parmesan. Try to use sun-dried tomatoes that have already been soaked in oil. This oil will moisten the chicken breasts and prevent them from drying out. |
If you are not able to obtain these, you can soak sun-dried tomatoes in ½ cup of oil for a few hours.

Ingredients:1½ lb / 700g boneless skinless chicken breasts7oz / 200g sun-dried tomatoes in oil3½ oz / 100g olives, pitted and roughly chopped½ oz / 15g fresh coriander, roughly chopped2 tablespoons capers1 cup loosely packed strong cheese, grated (mature cheddar is a good choice)
- Heat the oven to 350° F / 180° C.
- Place the chicken breasts in an oven-proof dish.
- Mix together the sun-dried tomatoes, olives, coriander and capers.
- Spread over the chicken breasts.
- Sprinkle over the cheese.
- Bake for about 20 minutes, until the chicken is cooked through.
- Serve with a big salad or lots of green vegetables.
