Baked Boneless Chicken Breast Recipe

This baked boneless chicken breast recipe was devised with 30 minute meals in mind.

It resonates with bold Italian flavor whilst being very quick to prepare. This is rather like an easy version of a recipe for Chicken Parmesan. Try to use sun-dried tomatoes that have already been soaked in oil. This oil will moisten the chicken breasts and prevent them from drying out.


If you are not able to obtain these, you can soak sun-dried tomatoes in ½ cup of oil for a few hours.

  • Serves 4 - 6
  • Ingredients:

  • 1½ lb / 700g boneless skinless chicken breasts
  • 7oz / 200g sun-dried tomatoes in oil
  • 3½ oz / 100g olives, pitted and roughly chopped
  • ½ oz / 15g fresh coriander, roughly chopped
  • 2 tablespoons capers
  • 1 cup loosely packed strong cheese, grated (mature cheddar is a good choice)
  • Method:

    1. Heat the oven to 350° F / 180° C.
    2. Place the chicken breasts in an oven-proof dish.
    3. Mix together the sun-dried tomatoes, olives, coriander and capers.
    4. Spread over the chicken breasts.
    5. Sprinkle over the cheese.
    6. Bake for about 20 minutes, until the chicken is cooked through.
    7. Serve with a big salad or lots of green vegetables.
