This baked boneless chicken breast recipe was devised with 30 minute meals in mind. | It resonates with bold Italian flavor whilst being very quick to prepare. This is rather like an easy version of a recipe for Chicken Parmesan. Try to use sun-dried tomatoes that have already been soaked in oil. This oil will moisten the chicken breasts and prevent them from drying out. |

- Place the chicken breasts in an oven-proof dish.
- Mix together the sun-dried tomatoes, olives, coriander and capers.
- Spread over the chicken breasts.
- Sprinkle over the cheese.
- Bake for about 20 minutes, until the chicken is cooked through.
- Serve with a big salad or lots of green vegetables.
